Cabernet Merlot 2019
Fruit driven, soft and voluptuous and medium bodied. Perfect fruit allowed a long cold soak post crushing, yeast added and fermented slowly for ten days. Racked into barrel after post macerating on skins has led to a softened palate.
86% Cabernet Sauvignon, 14% Merlot, makes the style to be suit most people’s palates, with firm structured tannins derived from “sweet” French oak treatment. The complex nose consists of intense plum, raspberries with hints of liquorice. The palate exhibits a fine chocolate texture and an abundance of blackberries and dark berries
This drink-now wine is perfect for that long lunch, or as an accompaniment to a rich beef casserole on cold winter nights. Try it with some of your favourite cheddar and pepper crackers. 2019 was a strong year for red wine in the Great Southern region, with a long, dry Summer period and cooler Autumn days to finish the maturation perfectly.
